My go-to quick meal is quesadillas. They are so easy to prepare and with so many variations you can't get bored! I often do a basic one with canned beans or (homemade refried beans that I have on hand), cheese, tomatoes or fresh salsa and shredded leftover chicken. I usually use corn tortillas for these but flour work fine as well. Sometimes we use ground turkey in the filling or spinach and chicken. Whatever you have on hand can be used. Enjoy!
